Oh we had out of town guests this past weekend.  We ate and we swam, but oh that heat! I made Tomato Salad, Chicken Cacciatore and for dessert, Jello Peach Pie.  Nothing soothes a hot Summer’s day better than a slice of cool, refreshing Jello Peach Pie.  I also got to use these vintage dessert bowls I was saving for Thanksgiving.

Depending on what fruit you plan to use, your prep time could as little as 10 mins.


:: 2-3 cans of peaches with juices
:: Knox Gelatin. 2 pouches. If using other brands. Follow instructions.
:: 1/2 cup hot water
:: 1/4 cup sugar
:: 1 pie shell

Optional: Tradition recipes call for 1/4 tsp cornstarch to ‘hold’ jello but I don’t like that it makes the jello ‘cloudy’.

:: Open cans of peaches with juices, and sugar into a mixing bowl.
:: Sprinkle gelatin powder over peaches and juice.
:: Stir to combine. Knox Gelatin will dissolve completely.  Otherwise, slowly add a small amount of hot water to dissolve clumps.
:: Chill in fridge till jello is set.
:: To assemble, scoop peach jello into graham pie shell.  Serve slices of pie with ice cream, or scoop into pretty dessert dishes, topped with sprigs of mint.
