Happy New Year! If you’re trying to be mindful about , here’s a light and easy fish recipe that’s a plateful of nutrition. We like to pair this Olive Caper Fish with Spinach Raisin Rice for a pop of color and texture.
FISH + DRESSING
:: White fish fillets. You can pan fry, bake, or broil, any way you like.
:: Can of orange segments and some juice
:: Salt + Pepper
Put fish fillets, sliced olives, capers, orange segments, juice of half lemon and some of the orange segment’s canned juice, salt and pepper in a pan. You can poach, bake or broil. The result is a fresh, light, tangy, caperly, olive-y, sweet, tart, salty, bouncing-in-your-head kind of dressing. So good!
SPINACH RAISIN RICE
:: Spinach, chopped
:: Raisins, chopped
:: Unsalted butter
Transfer cooked rice to a pretty bowl, cos we’ll serve out of it too.
Add a few small pieces of butter..
Top with chopped raisins and spinach.
Then comes my favorite part.
Give it a toss!
The heat will wilt the spinach and bring out the flavor of the raisins.
I love watching all the different colors come together.
