Perfect Breakfast Potatoes

Because potatoes are a must this Easter weekend, I’ll like to share my two step trick for crisp potatoes with creamy insides, all without deep frying. This recipe produces results that resemble KFC’s potato wedges. Crisp outside and creamy inside but skinnier and healthier for you. 😋 This method is fast enough that I make it on weekday mornings too.

Ingredients
:: Potatoes cut into wedges or cubes
:: Seasonings: Olive oil, salt, pepper and thyme
:: Optional Add ons: Bell peppers and onions

Directions
:: In a microwaveable mixing bowl, toss potato cubes in olive oil, salt, pepper and thyme.
:: Cover with cling wrap
:: Microwave for 4-5 mins or 1 min per medium potato. (I’m usually scrambling eggs during this time)
:: Remove from microwave and empty all mixing bowl contents into a pan on medium heat.
:: Give the potatoes a quick sear to crisp the exterior. It would only take a min or two.
:: And now you have golden olive oil potatoes that are seasoned and creamy on the inside, crisp on the outside! 😋

Make the dish pretty with parsley flakes. 😍 #eatwithyoureyesfirst

Tip: Use some or all of the microwaved potatoes. Take a min or two to sear batches to refill the potato bowl as needed. Warm potatoes?! They go fast!

Tip 2. Try different seasonings. Cajun potatoes, herbed potatoes, the possibilities are endless. 🐰
