We love a good one skillet meal. Pork chops and peaches are a great way to enjoy the seasonal peaches. Pan grill the pork chops first, then use the pan drippings to make a simple peach and onion topping to give the chops a finishing touch.
:: Bone-in pork chops seasoned with salt and pepper
Peach and Onion Topping
:: Ripe peaches, sliced
:: Red onions, sliced
:: Basil leaves
:: Heat a small piece of butter to coat skillet. Cook seasoned pork chops for 4-6 minutes on each side till done. Transfer to a plate and tent. Do not wipe down.
:: Add onions back to pan. Sauteed for a min or two till fragrant. Add peaches and basil leaves. Gently toss to coat.
:: To serve, pour the warm peaches and hot pan drippings over pork chops.
