Perfect Breakfast Potatoes

Because potatoes are a must this Easter weekend, I’ll like to share my two step trick for crisp potatoes with creamy insides, all without deep frying. This recipe produces results that resemble KFC’s potato wedges. Crisp outside and creamy inside but skinnier and healthier for you. 😋 This method is fast enough that I make it on weekday mornings too.

Ingredients
:: Potatoes cut into wedges or cubes
:: Seasonings: Olive oil, salt, pepper and thyme
:: Optional Add ons: Bell peppers and onions

Directions
:: In a microwaveable mixing bowl, toss potato cubes in olive oil, salt, pepper and thyme.
:: Cover with cling wrap
:: Microwave for 4-5 mins or 1 min per medium potato. (I’m usually scrambling eggs during this time)
:: Remove from microwave and empty all mixing bowl contents into a pan on medium heat.
:: Give the potatoes a quick sear to crisp the exterior. It would only take a min or two.
:: And now you have golden olive oil potatoes that are seasoned and creamy on the inside, crisp on the outside! 😋

Make the dish pretty with parsley flakes. 😍 #eatwithyoureyesfirst

Tip: Use some or all of the microwaved potatoes. Take a min or two to sear batches to refill the potato bowl as needed. Warm potatoes?! They go fast!

Tip 2. Try different seasonings. Cajun potatoes, herbed potatoes, the possibilities are endless. 🐰

Love is … simple.  🙂

Just boxed brownie mix and jelly bean hearts will make a lot of friends and family smile.
Follow package instructions.
Use a 9′ x 13″ baking pan. Bake.
Shortly after removing oven, place jelly bean hearts in rows and columns.
Slice into squares.
You may even decorate with icing to look like love letters.

Try it!  It’ll make someone’s day!

Best Sweet Potato Fries Ever :)

I’m so glad this dog loves veggies. Currently going crazy and will do anything for sweet potatoes. I’m making crisp, baked sweet potato fries 🍟 today with another restaurant trick.

Crisp edges. Soft centers.Baked, not fried. 😇 The secret? A toss in rice flour before baking. And don’t salt them till ready to serve. These can be made ahead and frozen till ready to use.

Oven Baked Sweet Potato Fries.

Ingredients
:: 2 sweet potatoes cut into 1/4” matchsticks. Then soak in water for 15 mins to remove some of the natural starches. Towel dry and set aside.
:: 1 tsp rice flour (my preference). 1/2 tsp Corn starch works too but be very careful not to use too much or the fries will get soggy instead.  Rice flour is also the secret in super crumbly shortbread cookies. 😉
:: Oliveoil spray can. Because you need just a light spritz.
:: Seasoning options: cumin & paprika, garlic & lemon or a vegetable spice blend.
:: Parchment paper 🤗. Got to love parchment paper. Life saver.

Directions
:: Preheat oven to 400 deg.
:: In a ziploc bag, toss sweet potato stick in 2 tsp of rice flour. The rice flour should look barely there.
:: Distribute coated sweet potatoes on parchment paper prepared baking tray.
:: Lightly spritz some oil. Just enough for the spices to hold. Sprinkle spices. Hand toss sweet potato sticks gently.
:: Bake for about 25-30 mins to your preference of crispness..

Serve with a dip or as part of a meal.

Baked Peach and Apple Dumplings

I didn’t know what to call this really.   But as it baked off and the sweet smell of cinnamon and brown sugar filled the house, I was certain they are peach and apple dumplings.  🙂

What you need
: Pie Crust
: Apples or peaches.  I made both.
: Brown sugar
: Cinnamon and/or nutmeg.
: Butter
: Twine or baking string

Roll out the pie crust.
Put the sliced peaches/apples on top and magically sprinkle with brown sugar and cinnamon,
Place a slice of butter over fruit slices.
Gather up the dough into a little dumpling.
Secure with baking twine.

Follow pie package instructions. Bake at 375 deg F for about 30-40  mins, or until crust is golden brown. Be careful. My peach dumpling looked ready to burst with steamy hot filling.
Top with vanilla bean gelato, berries and mint!  Yum and so pretty!   😀

Frugal + Fabulous Black Bean Salsa

I call this the frugal and fabulous salsa because 5 mins,  4 cans of veggies, 1 onion and 1 lemon.  Our weekend Super Bowl party kept growing and growing. New friends and old. Moms, dads, kids, a Great Dane and grandmas! We didn’t watch much football, really.  Much of the time everyone was in the pool, the 2 dogs included.  We didn’t watch much football, really.  While everyone was in the pool, I mixed up this quick 5 min salsa as an extra dish for my favorite hungry people.  Make sure to have an extra bag of chips for this.  It is fresh, tangy and highly addictive!

Ingredients
:: 1 can black beans
:: 1 can corn
:: 1 can Rotel tomatoes with green chile
:: 1 can diced tomatoes (fire roasted tomatoes preferred)
:: 1 small white onion
:: 1 brunch cilantro
:: Juice of 1 lime/lemon
:: Salt and pepper

Directions
:: Chop onions and cilantro
:: Drain canned veggies
:; Mix everything up in a bowl.
:: Finish with lime/lemon juice, salt and pepper.

Sticky Bourbon Ginger Marmalade Chicken Wings

This needs no introduction. Messy food is good food! Whether it be tailgating, a BBQ, or just a regular weekend in your backyard, chicken wings are always a hit. There are just 3 ingredients for this marinate. Prep ahead and freeze if you can.  The longer it marinates, the better they taste!  Alcohol is optional and it burns off with cooking, so this is completely kid friendly.

Ingredients
:: Chicken drumstick and wing sections
:: Orange marmalade jam.  The ones with the orange peel in the jar are the best!
:: Ginger powder (Optional: A natural tenderizer and great for a spicy kick)
:: Bourbon whiskey.

Directions
:: Make slits in the chicken sections.
:: To your liking. Combine spoonfuls of marmalade jam with a dash of ginger power and splashes of bourbon whiskey.
: Combine chicken pieces and marinade in a ziploc bag.  Marinate for at least 3 hours.  Better overnight or a few days in advance in the freezer.
:: To prepare, grill with orange slices or roast in the oven at 375 deg for 45 mins.
:: Serve with lots of napkins!

Poached Olive Caper Fish with Spinach Raisin Rice

Happy New Year!  If you’re trying to be mindful about , here’s a light and easy fish recipe that’s a plateful of nutrition. We like to pair this Olive Caper Fish with Spinach Raisin Rice for a pop of color and texture.

FISH + DRESSING
:: White fish fillets.  You can pan fry, bake, or broil, any way you like.
:: Capers
:: Olives
:: Can of orange segments and some juice
:: Salt + Pepper

Put fish fillets, sliced olives, capers, orange segments, juice of half lemon and some of the orange segment’s canned juice, salt and pepper in a pan. You can poach, bake or broil.  The result is a fresh, light, tangy, caperly, olive-y, sweet, tart, salty, bouncing-in-your-head kind of dressing.  So good!

SPINACH RAISIN RICE
:: Rice
:: Spinach, chopped
:: Raisins, chopped
:: Unsalted butter

Transfer cooked rice to a pretty bowl, cos we’ll serve out of it too.
Add a few small pieces of butter..
Top with chopped raisins and spinach.
Then comes my favorite part.
Give it a toss!
The heat will wilt the spinach and bring out the flavor of the raisins.
I love watching all the different colors come together.

Ginger Basil Grapefruit Prosecco

Part of being a community store is ensuring that our pets and children are safe. I had Mimi enrolled in classes, as well as an additional program she may enjoy – becoming a certified therapy animal. She took her AKC Good Canine Citizenship Test yesterday and passed. This weekend, she will be taking her therapy animal test to qualify her for a volunteer position at senior homes and children’s hospitals. It was Mimi who took the tests, but her Mommy needed a drink though. So I feel all you Mommies out there. LOL! Mimi’s test adventures inspired this Grapefruit Ginger Basil Prosecco Spritzer.

First make the simple syrup. Bring to a simmer water, sugar, basil leaves and ginger. Chill in the refrigerator for later use.
Juice grapefruits or use store bought juice.

To serve, fill glass with 1/4 ginger basil syrup, 1/4 grapefruit juice and 1/2 Prosecco, champagne or anything bubbly.

This was so deliciously refreshing I am going to make it for Sunday Supper with our friends this weekend. It’s one of many Sunday Suppers Robert and I decided to have for our friends for their support of our wedding day. Nobody would let me cook that day, but I really wanted to make another day where I can cook for the best people around.

But first, my Grapefruit Ginger Basil Prosecco Cocktail…. and then I have a handler’s test to take online, and Mimi has her therapy animal evaluation on Saturday. :s  I don’t think she is ready for it. The worst that could happen is the playful pup thinks it’s play time and cannot focus and we’ll be sent home.  LOL.

Rotisserie Chicken and Wild Mushroom Risotto

We finally got some ‘winter’ in Los Angeles.  After a summery Fall, we’re finally entering a cooler spell.  I made a rotisserie chicken and wild mushroom risotto! Creamy, creamy risotto; the epitome of Italian home cooking and comfort food.

Here’s how to make creamy, creamy risotto.  If you’ve never made risotto before, this easy recipe is a great place to start.

Ingredients
:: 2 tablespoons of butter, a little more doesn’t hurt either!
:: 1 yellow onion, diced
:: Mixed mushrooms, any kind
:: Supermarket rotisserie chicken, shredded
:: Arborio rice, 2 cups
:: 2-4 cans of chicken broth, warm
:: Salt and pepper.
:: Chopped parsley
:: Parmesan cheese

Extra Ingredients
:: Patience and love

* Tip: Always use warmed chicken broth or water.  I like to have a small sauce pan with warm chicken broth.

Here we go!
:: Start with heating the chicken broth.  Set aside.
:: Then, heat butter in the pan.  Add onions.  Saute till translucent and soft.  About 3 minutes.
:: Add mushrooms and rice, some salt and pepper.  Stir for another few minutes.
:: Add warmed chicken broth, half cup at a time.  Keep stirring gently.  And keep adding warm chicken broth periodically until rice is tender and a creamy texture is achieved.
:: When rice is done, stir shredded chicken into the rice to combine.

Before serving, garnish with chopped parsley and parmesan cheese.
